On Tuesdays at 11am, just a few miles from the dockland warehouses, brokers on Mincing Lane graded cocoa, setting the price of a crop grown thousands of miles away. This talk follows the plant back to Trinidad’s estates and to the labourers whose skills could determine the cocoa’s success in a market being reshaped by new producers and evolving demands.
